Flametree S.R.S. Wilyabrup Cabernet Sauvignon is part of the Sub Regional Series, a collection of wines each sourced from a single Margaret River locale in which they excel.
The Cabernet Sauvignon is from Wilyabrup, long regarded as the Margaret River benchmark for the variety. The vineyard is planted to the Old Houghton clone, cuttings from the famous Moss Wood Vineyard.
The fruit is machine harvested, sorted and destemmed in the vineyard, then tipped directly into a small open fermenter without traditional crushing or destemming. Wild fermentation begins over the next few days.
The cap of grape skins is worked by hand for soft tannin extraction. After around one month on skins, the wine is pressed into 50% new French oak barrels to mature for 14-18 months.
Inky red, Flametree S.R.S. Wilyabrup Cabernet Sauvignon is medium to full bodied with fine grained tannins, balancing fruit and oak flavours. Cellaring potential is 15 years.
